Smothered Sweet & Sour Chicken

List of Ingredients
2 T vegetable oil
3# chicken legs or boneless chicken breasts
1 large onion, chopped
3 T ketchup
2 T lemon juice -OR- white wine vinegar
2 T soy sauce
2 T sugar -OR- brown sugar
1/2 tsp freshly ground pepper
1 T cornstarch dissolved in ¼ C cold water
Lemon slices (optional)
green and/or red pepper slices (optional)
crushed pineapple with juice, to taste (optional)
Recipe
In a large fry pan, heat oil & brown chicken all sides about 10 minutes.
Meanwhile, in a small bowl, combine onion, ketchup, lemon juice/vinegar, soy sauce, sugar, pepper & ½ C water or the undrained pineapple, blend well.
Pour sweet & sour mix over chicken. Cover, reduce heat to low & cook 20 minutes until tender. Remove chicken to serving platter & keep warm.
Add cornstarch mix to sauce. Raise heat, bring to boiling and cook, stirring, til sauce thickens, about 2 minutes. Pour over chicken & garnish w/lemon slices if desired.
Serve chicken on a bed of steamed rice & serve sauce on the side.
