Spicy Chicken with Couscous

1/4 teaspoon ground cumin
1/4 teaspoon ground turmeric
1/8 teaspoon cayenne pepper
1 large boneless skinless chicken breast (about 8ounces), cut into 1-inch strips
2 teaspoons olive oil
1 medium onion, chopped
1 red bell pepper, cored, seeded, diced
3 large garlic cloves, minced
1 1/2 cups chicken broth
1 cup frozen peas, thawed
3/4 cup whole-wheat couscous
Salt and pepper to taste
1/4 cup chopped fresh cilantroRecipe
Combine cumin, turmeric and pepper in a cup. Sprinkle over chicken strips.
Heat oil in a large nonstick skillet over medium-high heat. Add chicken and cook for 3 minutes or until chicken is lightly browned. Transfer to a plate.
Add onion and bell pepper to skillet. Cook for 5 minutes over medium heat, stirring frequently. Add garlic and cook for 1 minute. Add broth and scrape up any browned bits. Bring broth to a boil. Return chicken to skillet. Add peas. Cover and reduce heat to low. Simmer for 2 to 3minutes or until chicken is cooked through. Stir in couscous; cover skillet. Simmer for 1 minute. Remove from heat and set aside 5 minutes or until liquid is absorbed. Season to taste with salt and pepper. Sprinkle with cilantro.
