    Tarragon Cream Chicken

    List of Ingredients




    2 boneless skinless chicken breasts
    2 tbs. olive oil
    5 oz. white mushrooms sliced
    2 oz. prosciutto diced bacon (may substitute cooked bacon)
    1/2 cup dry white wine (may substitute low sodium chicken broth)
    1/2 cup heavy cream
    1 tbs. tarragon vinegar

    Recipe



    Season chicken breast with salt and pepper, saute chicken in olive oil over medium high heat on both sides (5-7 minutes total). Remove chicken from pan, add mushrooms and prosciutto to pan, soften and brown (3-4 minutes). Add wine (or chicken broth) and cream. Reduce heat and simmer until sauce thickens (about 6 minutes). Return chicken to pan and stir in tarragon vinegar. Cook 2 minutes.Garnish with chives.

    Serves 2.
