2 (14oz) cans water-packed artichoke hearts
1 (8oz) can sliced water chestnuts
1 (6.5oz) jar sliced msuhrooms
6 green onions, finely chopped
6 TBS olive oil
2 TBS wine vinegar
Salt and pepper to taste
1 TBL mayonnaise
Recipe
Drain artichokes and cut into bite-size pieces. Drain water chestnuts and mushrooms. Add to artichokes. Add chopped green onions, tops and bottoms.
Make a dressing of the oil, wine vinegar, salt and pepper. Add the mayonnaise. Beat until well blended and pour over salad. Marinate 12 - 14 hours before serving.
