Chickpea Salad

List of Ingredients
1 bag fresh baby spinach
1 jar roasted red pepper
2 cans chickpeas, drained (also called garbanzo beans)
Dressing:
3 or 4 tablespoons extra-virgin olive oil
3 or 4 tablespoons lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon fresh basil
1/2 teaspoon fresh parsley
Salt and pepper to tasteRecipe
Wash and dry spinach. Chop roasted red peppers. Toss together with tongs and set to aside. For the dressing, mix olive oil and lemon juice together. Set aside.
Chop parsley and basil. Combine garlic, parsley and basil. Whisk into olive oil and lemon juice. Add salt and pepper.
Add the chickpeas to the spinach mixture. Pour dressing on top and toss well. Serve immediately.
Tester's note: We also made this with lettuce and it worked equally well.
