2 tbsp. lemon juice
2 tsp. sugar
1/4 cup vegetable oil
4 - 5 cups torn salad greens
1 cup grated sharp cheddar cheese
1/2 cup grated parmesan cheese
1½ cups mandarin orange sections
1½ cups grapefruit sections
1½ cups seedless red grapes
1 8-oz. can sliced water chestnuts, well drained
1/4 cup sliced almonds
Recipe
In a small bowl, combine lemon juice & sugar. Slowly add oil, whisking until smooth & thickened. Set aside.
In a large bowl, combine greens, cheeses, oranges, grapefruit, grapes & water chestnuts. Add dressing & toss gently. Sprinkle with almonds & serve immediately.
