6 ripe tomatoes, washed, and cut into chunks
1 rib celery, sliced thinly
2 Tbsp flat leaved parsley, stems removed
1 Tbsp fresh oregano leaves, crushed lightly
1 small red onion, sliced thinly
1/4 c extra virgin olive oil
1/4 c balsamic vinegar (Balsamico de Modena is a good one)
salt and freshly ground pepper to taste
Recipe
Put tomatoes, onion, celery in a large bowl.
Mix herbs with oil and vinegar, pour on top of the tomato mixture. Add salt and pepper. Toss lightly.
Let stand, covered, at room temperature for at least an hour to let flavors marry. Serve with crusty bread.
