    Fresh Mushroom Salad

    Recipe Introduction

    Sliced mushrooms in a tart, creamy dressing. Good and different. This is served at the Cavalier Hotel, one of those 'grande dame' hotels built early in the century on a hill facing the Atlantic. They serve it on a glass plate topped with chives.

    List of Ingredients

    1/4 lb fresh mushrooms, sliced
    1/4 tsp pepper
    4 TBSP salad oil
    1/2 cup chopped onions
    4 TBSP vinegar
    1/2 lemon
    2 tsp dry mustard
    1 cup sweet cream
    1 tsp salt
    1 TBSP chopped chives

    Recipe

    Mix dry mustard, salad oil and vinegar in a large wooden bowl until mustard is completely dissolved. Add chopped onion and mix. Add fresh mushrooms, salt and pepper. Toss until well mixed. Strain lemon juice through napkin (I use strainer) over mixture. Add sweet cream and toss.
