    Ham & Lima Bean Salad

    List of Ingredients




    1 package (10 ozs.) frozen baby lima beans
    1 cup sliced fresh mushrooms
    1/2 cup chopped red onion
    2 cups coarsely chopped fully cooked ham
    1/4 cup sliced black olives
    2 tbsp. snipped fresh parsley
    1 jar (2 oz.) diced pimiento, drained
    Olive oil and tarragon vinegar to taste
    1-2 cloves minced garlic
    1/4 tsp. sugar
    1/4 tsp. lemon juice
    Salt and pepper to taste

    Cook lima beans according to package directions. Drain. Rinse with cold water, drain again. In a mixing bowl combine beans, mushrooms, onion, ham, olives, parsley and pimiento.

    For dressing, in a jar combine oil, vinegar, garlic, sugar, lemon juice, salt and pepper; cover and shake to combine. Pour over bean mixture, tossing to coat. Cover and chill. This salad is best made a day ahead, stirring once or twice.
