    New Potato & Bleu Cheese Salad

    List of Ingredients

    10 small new potatoes
    3 slices diced bacon
    1 cup chopped onion
    1/4 cup cider vinegar
    1/2 tsp. sugar
    1 clove minced garlic
    4 tbsp. veg. or olive oil
    1/2 tsp. pepper
    2 ounces bleu cheese, crumbled
    10 ounces fresh spinach

    Recipe

    Cook & drain potatoes, cut into bite size pieces & set aside. In skillet, fry bacon until slightly crisp. Add onions, cook and stir till onions are wilted, about 5 minutes. Remove from heat and stir in garlic, vinegar, oil, sugar and pepper. Pour mixture over potatoes and toss well.

    Immediately before serving, toss potatoes, spinach and bleu cheese in serving bowl.
