1C rice vinegar
1/2C chopped shallots
10teas. Sugar
2 pounds small beets
2 large cucumbers,seeded and cut
2/3C chopped fresh chives
Recipe
Stir vinegar, shallots and 6teas. sugar in small bowl.
Cook beets, peel and chop. Toss with half of marinage to coat. Chill overnight.
Place cucumbers in large bowl and sprinkle with rest of sugar. Add remaining marinade and chill overnight.
Drain salads separately, return to bowls. Mix half of chives into each salad.
