1 c mayo
2 T vinegar (I use rice vinegar)
1 1/2 tsp salt
2 tsp mustard (or a little more)
1 tsp sugar
1/4 tsp pepper
1/2 tsp celery seed
4 c peeled, cooked, diced potatoes
1 c sliced celery
1/2 c sliced green onion
2 T chopped parsley
4 Hard cooked eggs, chopped
chopped dill pickles and/or green olives - about 1/2 cup(or a little more)
Recipe
In large bowl combine all ingredients except potatoes. Add mixture to potatoes and toss gently. Best if made day ahead. Remember some moisture is absorbed so don't make it too dry.
