List of Ingredients
8 medium red potatoes, cubed
1½ C mayonnaise
2/3± cup sour cream, to your taste & desired consistency
3 T balsamic vinegar
2± tsp spicy brown prepared mustard ~ to taste
1½ tsp dried minced onion
1 tsp celery seed
1/2 small onion, chopped coarse
1 rib celery, sliced
1/4 red bell pepper, chopped
1/4 green bell pepper, chopped
4~5 strips bacon, cooked crisp and crumbled
dash of salt
fresh ground pepper to taste
5 hard cooked eggs, sliced
paprika
sweet relish (optional)Recipe
Put potatoes in enough water to cover, bring to boil; cover reduce heat to low about 7-10 minutes; drain and rinse with cold water; drain well; place in bowl and place in fridge to chill.
In a separate bowl, mix mayonnaise, sour cream, vinegar, mustard, onion, celery seed, celery, red & green pepper, bacon, salt & ground pepper; pour over potatoes and toss to mix. Lay sliced eggs over top and sprinkle with paprika. Return to fridge and allow to chill.
