Red Cabbage, Apple & Blue Cheese Salad

List of Ingredients
2 lbs. red cabbage, cored and shredded
1 Gala apple, peeled, cored and chopped fine
¼ cup chopped green onions
8 ozs. blue cheese, crumbled
¼ cup cider vinegar
½ cup canola oil or corn oil
½ tsp. fennel seeds
1 tsp. sugar or to taste
Salt and freshly ground black pepper, to taste
½ cup toasted pecans, for garnish
Recipe
1. Toss together the cabbage, apple, green onions and cheese in a large salad bowl.
2. In a separate bowl, whisk together the vinegar, oil, fennel seeds and 1 teaspoon sugar. Add salt, pepper and more sugar, if needed.
3. Pour the dressing over the salad and toss to blend. Sprinkle the pecans on top and serve. Season with salt and freshly ground black pepper to taste.
Makes 6 to 8 servings
