    Shrimp Taco Salad

    List of Ingredients

    1/4 head green leaf lettuce, torn (I subbed Spring Mix)
    1/4 large tomato, diced (I subbed grape tomatoes)
    1/4 15-ounce can black beans, drained & rinsed
    1 cup tortilla chips, crumbled (I used Baked Tostitos)
    1/4 cup Cheddar cheese, shredded
    1 1/2 teaspoons oil
    1/4 small onion, diced
    1/4 teaspoon chili powder
    5 ounces shrimp, cleaned
    1 pinch salt
    1 pinch pepper
    1/2 teaspoon lime juice
    3 tablespoons thousand island salad dressing (I used fat-free)

    Recipe

    Combine first five ingredients in large salad bowl (I layered mine in individual dishes, so that I could leave tomatoes out of DH's). Meanwhile heat oil in skillet. Add onion and chili powder; cook 5 minutes. Add shrimp, salt, pepper, and lime juice; cook 4 minutes. Add to salad bowl. Toss with dressing (I poured it on top & let each person mix their own).
