1 1/2 c Shredded carrots
1 1/2 c Shredded white cabbage
1 c Golden raisins
1 Granny Smith apple
1 tb Fresh lemon juice
2 ts Honey
1 tb Fine-shred unsweet coconut
1 c Plain yogurt -OR- 1/2 c Plain yogurt & 1/2 c Sour cream
1/4 c Chopped walnuts (opt)
Recipe
Peel, core and grate the apple. Combine with the carrots, cabbage, and raisins.
In a separate bowl, whisk together the lemon juice, honey, coconut, and yogurt or yogurt-sour cream mixture.
Combine the cabbage mixture and the dressing, and toss thoroughly. Add the walnuts, if desired, and stir until they're well distributed.
Refrigerate the slaw until it's thoroughly chilled, about 3 hours. It will keep for up to 3 days.
