I've posted this before, but it would be gorgeous on a Christmas buffet. I serve it in a big white stoneware dish (10x15) and it looks beautiful. It also tastes delicious, is cheap, and easy!
1/3 cup malt vinegar
1 tablespoon brown mustard
1 tablespoon honey
1/2 teaspoon poppyseeds
2/3 cup olive oil
1 pound baby spinach
1 red bell pepper, stemmed, seeded and sliced
1 red onion, peeled and sliced
1/4 pound feta cheese
Recipe
In a small saucepan combine malt vinegar, brown mustard, honey and poppyseeds; blend well. Stir in olive oil and cook over low-heat for 2 minutes.
Arrange spinach on large platter (or serving plates) with red bell pepper, red onion and feta cheese. Drizzle dressing on top.
