Strawberry Spinach Salad w/Orange Honey Dressing

List of Ingredients

Dressing:
1/4 c. orange juice
1/4 c. honey
1 T. oil
1 t. DiJon Mustard

Salad:
6 c. bite-size pieces spinach
1 c. strawberries, diced
1/3 c. diced gr. onions
1 (11 oz.) can mandarin oranges, drained
1/4 c. pine nuts, toasted


Recipe

To prepare dressing:
combine orange juice, honey, oil and mustard in tightly covered container and shake until well mixed.

To prepare salad: in lg. bowl, combine spinach, strawberries and onions and mandarin orange segments. Toss with dressing. Sprinkle with pine nuts.

Serves 4.
