    Cranberries in Syrup

    AUTHOR’s NOTE: Spoon this whole~berry syrup over waffles & pancakes; or whip it into softened butter for an extra~rich breakfast spread.

    List of Ingredients




    1 C water
    ½ C sugar
    ½ 12oz pkg cranberries
    ¼ C maple syrup
    ¼ C coarsely chopped pecans
    1 tsp grated lemon rind

    Recipe



    In a 2-qt saucepan, combine the water & sugar. Cook, without stirring, over medium heat until the sugar dissolves.

    Stir in the cranberries, maple syrup, nuts & lemon rind. Simmer til the berries begin to pop; about 5 minutes. Remove from heat.

    Serve cranberries warm or cover & store in fridge til ready to use.

    Makes about 2½ cups.
    ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~
    CRANBERRY BUTTER

    1 T drained Cranberries in Syrup
    ½ C {1 stick) butter, softened

    In a bowl, beat the cranberries into the butter.

    Spoon the cranberry butter into a serving dish or individual crocks, then cover & refrigerate til completely chilled
