Sausage, Pecans & Sweet Potatoes

List of Ingredients
3 lbs. sweet potatoes
1 lb. pkg. pork sausage
6 Tbs butter
1/2 cup packed brown sugar
3/4 cup chopped toasted pecans
1 tsp cinnamon
salt and pepper to taste
Recipe
Preheat oven to 350 degrees.
Brown sausage in a skillet over medium high heat until brown. Drain and set aside.
Wash sweet potatoes, prick with a fork and place on a baking sheet covered with aluminum foil(makes for easy cleanup). Bake for 1 hour or until potatoes are tender. Set aside to cool slightly.
Cut cooled sweet potatoes into 1 to 2 inch cubes and place in a 2 1/2 quart casserole dish. Add sausage, butter, brown sugar, pecans, cinnamon ,salt and pepper. Mix thoroughly, cover and bake for 30 to 40 minutes or until hot.
