    List of Ingredients




    2 med. zucchini, unpeeled
    1/2 sm. onion, diced
    1 can cr. of chicken soup, undiluted
    1 stick oleo, melted
    1 lg. carrot, sliced thin
    8 oz. sour cream
    1 6 0z. pkg. Stove top stuffing (or any brand)

    Recipe



    Dice squash and slice carrot--bring to boil in salt water until tender; drain .

    Prepare stuffing mix (reserve some for top) and stir in oleo.

    Mix all ingredients together. Put in well greased 9 x 13
    casserole and top with rest of stuffing. Bake 40 min. at 350*

    I sauted ( just until golden brown) boneless chicken breasts and placed on top of casserole--to make an easy dinner--so good!
