    Chile Con Queso Cheese Dip

    List of Ingredients

    1/4 cup butter or margarine
    1/2 cup finely chopped onion
    2 cans Rotel diced tomatoes and green chiles
    1/2 tsp. salt
    16 oz. monterey jack cheese (can use cheddar)
    1/2 cup heavy cream

    Recipe

    In skillet over medium heat, saute onion in butter. Add tomatoes and chiles, and salt, mashing the tomatoes with a fork. Simmer, stirring a few times, for about 15 minutes. Add cheese cubes, stirring until cheese is melted. Continue to cook, stirring, for 2 more minutes. Remove from heat and let stand 10 minutes. Serve in a chafing dish- this is the trick, keep it warm. Serve with tortilla chips. (you can use some chopped jalapeno if you want it hotter.)
