    Leek Potato Soup

    List of Ingredients




    2 tbls butter
    4 cups chicken broth
    1 1/2 cup cream
    3 whole leeks finely chopped
    1 pinch pepper or to taste
    4 medium potatoes peeled and thinly sliced (or diced)
    1 pinch salt or to taste
    1 medium yellow onion finely chopped

    Recipe



    Saute leeks and onion for 3 minutes in the butter. Add chicken broth. Simmer for 15 minutes or until tender. Blend until smooth. Stir in cream. Salt and pepper to taste. (Recipe did not mention when to add potatoes so they were boiled briefly before adding to the blended mixture. The potatoes are NOT to be blended.)

    Kathy's note: We loved this soup and thought it was extremely easy to prepare. Also, we used HEAVY cream, but would guess you can substitute what you would like.
