    List of Ingredients

    3 lbs ground meat
    1/3 cup oil (approx.)
    2 onions chopped
    6-8 cloves garlic diced
    salt/pepper to taste
    4 cans kidney beans drained
    2 cans tomatoes drained
    6Tbls Chili Powder
    1tsp cumin (to taste)
    1tsp marjoram (to taste)
    1tsp red pepper (to taste)
    3Tbls paprika (to taste)
    1 quart water
    To Thicken
    3Tbls Flour
    6Tbls WHITE cornmeal
    1 Cup Water


    Recipe

    Heat oil in pan, and sauté onion, 3-4 cloves chopped garlic, salt and pepper. Add Ground meat and brown, stirring constantly, until gray but NOT brown. Add 1qt water, cover and reduce heat, cooking over low fire for 1-1/2 to 2 hrs.

    Add all seasonings, stir in and allow to simmer for a minimum of 3min’s - 1hr is better! Add Tomatoes, and beans, stir in and allow to simmer at a bubble for a minimum of 1hr; the longer the better!

    In a separate container, mix together the thickening ingredients - you can either whisk together in a bowl, or place in a large jar with tight-sealing lid, and shake until all is mixed thoroughly. Add to chili. Allow to simmer at a bubble, stirring occasionally for a minimum of 1hr - like always, the longer the better! Now, I don't always thickin it....most times unless I'm "rushin it" I just let simmer covered n' then take lid off n' allow to cook down on it's own! Just melds them flavors all so wonderful! :o)

    Remember, you should stir the chili occasionally throughout the whole process to ensure it doesn’t stick, or burn.
