    This makes quite a bit, and the leftovers freeze quite nicely! Hope you enjoy it if you try it!! :)

    List of Ingredients




    2 Tablespoons Olive Oil
    1 Cup Diced Onion
    1/2 Cup Diced Bell Pepper
    1/2 Cup Diced Celery
    1 And 1/2 Teaspoons Diced Garlic (I Use My Press)
    1 Cup Converted Long Grain Rice
    6 Oz Smoked Sausage Cut In Slices
    6 Oz Cooked Ham In Bite Size Pieces
    2 10 Oz Cans Diced Tomatoes With Green Chiles
    1 Cup Chicken Broth
    1/4 Teaspoon Dried Thyme
    1/4 Cayenne Pepper (I Add 1/2 Teaspoon ;))
    1 Bay Leaf
    1 (15 Oz) Can Of Ranch Style Beans (I use pink beans
    because I have NO idea what ranch style beans are?? LOL)

    Recipe



    Heat oil in a large saucepan over medium heat. Saute onion, green pepper and diced celery until onions are soft and translucent. Stir in garlic and cook another minute.
    Add rice, sausage and ham. Cook 2-3 minutes to coat rice with oil, stirring frequently.
    Pour in tomatoes with green chiles and chicken broth. Season with cayenne, thyme, and the bay leaf. Bring to a boil.
    Cover and simmer 20-25 minutes or until liquid is absorbed. Stir in beans mix thoroughly and heat through!
