Thanksgiving/Christmas: Sweet Potato Apple Salad

Recipe Introduction

This is good for potlucks around Thanksgiving and Christmas.

List of Ingredients

4 c. cubed cooked sweet potatoes(canned or fresh will do equally well)
20 oz. can pineapple chunks, drained
1 pkg. (10 1/2 oz.) miniature marshmallows
4 red delicious apples, chopped
1/2 c. flaked coconut
1/2 c. chopped walnuts
12 oz. Cool Whip
3/4 c. mayonnaise or salad dressing


Recipe

In a large bowl, gently toss first 6 ingredients. Combine Cool Whip and mayonnaise. Fold into fruit mixture. Cover and chill at least 1 hour.

Makes 32 servings.
