2 - 3 cups of corn, cut fresh from the cob
1 egg yolk, well beaten
1 tablespoon flour
1/4 teaspoon salt
1 egg white, beaten stiff but not dry

Beat the flour & salt into the egg yolk; add the corn and mix well. Fold in the beaten egg white. Saute in butter over medium heat about 4 minutes on a side. I make little "patties" of them - probably 2 - 3 tablespoons to a fritter.
