    2 lb. baby carrots, peeled and trimmed
    grated rind and juice of 1 orange
    3 Tbsp. honey
    1 Tbsp. butter
    1 Tbsp. ground ginger
    2 Tbsp. finely chopped crystallized ginger
    salt and pepper to taste

    Recipe



    Combine carrots, orange rind and juice, honey, butter and ground ginger in a saucepan. Add water to just cover the carrots and bring to a boil. Cover the pan; lower the heat and simmer carrots for 8 minutes. Remove the lid; turn
    up the heat. Add the crystallized ginger and let the carrots bubble steadily until the liquid reduces to a syrupy consistency. This can take 20 minutes.
    Watch the carrots so they do not burn.
