    From Everyday with Rachel Ray (Nov. 6006)

    List of Ingredients




    1/2 cup water
    12 oz. root beer (I used IBC)
    1/3 cup light brown sugar
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground cumin (was worried about this one)
    1/2 teaspoon ground clove (this one caught DH's nose and prompted the "interesting")
    1/2 teaspoon coarse salt
    2 pounds baby carrots
    2 tablespoons fresh thyme, chopped (just realized I forgot this one)

    Recipe



    In large skillet, bring first 7 ingredients to a boil.

    Add carrots and return to a boil. Cover and cook 5 minutes (I cooked mine longer, until tender).

    Serves: 8
