2 cans refried beans
3/4 to 1 cup cooked brown rice
green chile sauce (recipe link below)
salt, black pepper, cumin, etc., to taste
10 or 12 8" flour tortillas
1½ - 2 cups grated cheddar cheese
shredded lettuce
diced tomatoes
sliced black olives
piquante sauce
sour cream
quacamole
Recipe
Combine beans, rice & 1/2 cup or so of green chile sauce and seasonings, warm slightly and divide evenly among all tortillas (tortillas will wrap better if warmed slightly before filling) Place rolled burritos in a greased baking dish and cover with grated cheese. Heat to serving temperature. Serve each individual serving smothered in green chile sauce and topped with lettuce, tomatoes & olives. Garnish with piquante sauce, sour cream and/or quacamole, as desired.
