    Pineapple Upside Down Cake

    List of Ingredients




    20 ounces pineapple slices
    1 stick butter, melted
    1 cup brown sugar
    8 ounces maraschino cherries, whole
    2/3 cup shortening
    1 cup sugar
    2 eggs
    2 teaspoons vanilla
    2 cups sifted all purpose flour
    2 1/2 teaspoons baking powder
    1/2 teaspoon salt

    Recipe



    Drain pineapple; reserving juice. Put melted butter in bottom of 9x13 baking pan; add brown sugar and 2 tablespoons of the reserved pineapple juice. Arrange pineapple and cherries in the bottom of the baking pan.

    Add water to remaining pineapple juice to make 1 cup.

    Cream together shortening and sugar until light and fluffy. Add vanilla and eggs and mix well.

    Sift together flour, baking powder and salt. Add to the creamed mixture alternately with the pineapple juice/water mixture, beating after each addition. Spread over pineapple.

    Bake at 350 for 45 minutes. Cool 5 minutes; invert onto serving plate. Serve warm.
