    Upside-Down Shepherd's Pie

    4 cups Master Meat Sauce
    2 carrots, sliced
    2 celery ribs, sliced
    1 zucchini, cut into quarters lengthwise and sliced
    1/4 cup butter
    1/4 cup chopped scallions
    1 tsp salt
    1/4 tsp black pepper
    6 cups hot mashed potatoes

    Recipe



    In a large soup pot, combine meat sauce, carrots, cellery and zucchini. Bring to a gentle simmer over medium-high heat. Cook 8 to 10 minutes, or until the vegetables are tender, stirring occasionally.

    Meanwhile, in a small saucepan, melt butter over medium-low heat. Stir in scallions, salt, and black pepper. Cook 1 minute. Stir into mashed potatoes and beat until creamy.

    To serve, spoon the mashed potatoes on to dinner plates and top with the meat and vegetable mixture.
