1 tbsp vegetable oil
1 pound boneless, skinless chicken breasts, cut into 1/2-inch chunks
1 small onion, chopped
1/4 tsp salt
1 can (14.5 oz) whole tomatoes, undrained and chopped
1/2 green bell pepper, seeded and cut into chunks
1 can (7 oz) whole kernel corn, drained
2 tbsp salsa
1/2 tsp ground cuminRecipe
In a large skillet, heat oil over medium-high heat. Add chicken, onion, and salt. Cook until the chicken is brown on all sides, stirring occasionally. Add tomatoes with their juices and cook 5 minutes. Stir in bell pepper, corn, salsa, and cumin. Cook 5 minutes, or until the bell pepper is crisp-tender and the chicken is no longer pink inside. Serve with warmed tortillas.
