Pan-Roasted Sirloin w/ Onions & Pepper

2 pounds sirloin steak (about 1 1/4 inches thick)
2 tsp coarsely ground black pepper
salt
3 tbsp olive oil
2 onions, very thinly sliced
1 green bell pepper, seeded and very thinly sliced
1 red bell pepper, seeded and very thinly sliced
1 yellow bell pepper, seeded and very thinly sliced
2 garlic cloves, chopped
1 tsp dried basil
1 tbsp balsamic vinegarRecipe
Rub steak with ground pepper and season with 1/4 tsp salt. Heat a large heavy skillet over medium-high heat. When hot, add 1 tbsp of the oil, then the steak.
Cook about 7 minutes per side for medium-rare. To test for doneness, slice off a small piece of the steak. If it is medium at the edge, it will be medium-rare in the center. Remove steak from skillet and place on a serving platter; cover loosely with foil and keep warm.
Pour off any fat from skillet; add remaining 2 tbsp of the oil. Add onions to the skillet; saute about 5 minutes, or until soft and slightly golden. Add sliced peppers, garlic and basil; saute about 10 minutes or until the peppers are soft. Season with salt to taste and sprinkle with vinegar. To serve, slice the steak on a diagonal into thin slices. Top with the peppers and onions.
