Peppered Steak With Pearl Onion Sauce

16 ounces frozen pearl onions
1/4 cup beef broth
1/2 stick unsalted butter
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 cup cognac
1 1/2 pounds strip steaks (4 strip steaks)
1 teaspoon coarsely ground pepper
1/2 teaspoon salt
2 teaspoons oil
1 tablespoon chopped fresh parsley Recipe
Combine onions, broth, butter, sugar and 1/4 teaspoon salt in skillet; bring to boiling. Reduce heat to medium. Cover and simmer, stirring occasionally, until onions begin to brown, about 8 minutes. Slowly add cognac to avoid flaming; cook, stirring, until sauce thickens slightly, 3 minutes. Remove from heat; keep warm.
Sprinkle both sides of steak with the remaining salt and pepper, pressing to adhere.
Heat oil in large heavy skillet over high heat. Add steak, cook 6-7 minutes each side. transfer to platter. Spoon sauce over steaks and garnish with parsley.
