    Shell steaks have different names around the country. They're also called strip loins, strip steaks, or New York strip steaks. If none of these is available in your market, you can substitute other cuts in this recipe, especially T-bone, rib steak or club steak.

    List of Ingredients




    2 pounds shell steak (2 steaks, about 1 1/4 inches thick)
    1/4 cup olive oil
    4 garlic cloves, finely chopped
    2 tsp dried rosemary leaves, crumbled
    1/4 tsp black pepper
    salt

    Recipe



    Place steaks in a large, resealable plastic bag. In a small bowl, stir together olive oil, garlic, rosemary and pepper. Pour over steaks in the plastic bag and distribute marinade evenly. Seal the bag, pressing out as much air as possible. Marinate in the refrigerator for at least 8 hours and up to 24 hours.

    Preheat broiler or prepare barbecue grill. Remove steaks from the bag and scrape off marinade; season with salt. Discard unused marinade. Broil steaks about 1 inch from the broiler or about 2 inches from the heat source on an outdoor grill for 8 minutes per side, or until well browned on the outside and rare to medium-rare on the inside. Set the steaks aside for 5 minutes to rest before serving.
