Stuffed Flank Steak

1 cup herb-seasoned stuffing mix
1 (11 ounce) can sweet whole-kernel corn, drained
½ cup coarsely shredded carrot
1 (2 pound) flank steak
1 (14 ounce) jar marinara sauceRecipe
Combine first 3 ingredients in a bowl; toss well, and set aside.
Trim fat from steak. Using a sharp knife, cut horizontally through center of steak, cutting to, but not through, other side; open flat, as you would a book. Place steak between 2 sheets of heavy-duty plastic wrap, and flatten to an even thickness using a meat mallet or rolling pin. Discard plastic wrap. Spread stuffing mixture over steak, leaving a 1-inch margin around outside edges. Roll up steak, jelly-roll fashion; starting with long side. Secure at 2-inch intervals with heavy string.
Place a large nonstick skillet over medium-high heat until hot. Coal steak with cooking spray, and place in skillet, browning well on all sides. Place steak in a 6-quart electric slow cooker coated with cooking spray. Pour marinara sauce over steak.
Cover with lid; cook on high-heat setting 1 hour. Reduce to low-heat setting, and cook 7 hours or until steak is tender. Remove steak from slow cooker; discard string. Cut steak into 8 slices; serve with sauce.
