    Taco Bake

    List of Ingredients

    1 lb. very lean 96% ground beef or 12 oz. Boca crumbles
    1/2 cup diced onion
    1/2 cup diced red or green pepper
    1 8 oz. package Reduced Fat crescent rolls
    1 can pinto beans with or without jalapenos, drained
    1 packet taco seasoning
    2 - 8 oz. cans tomato sauce
    1 cup fat free cheddar cheese


    Recipe

    Preheat oven to 375.

    Brown beef, onion and pepper, drain.

    Spray 9" X 13" baking dish with non-stick cooking spray. Unroll crescent rolls (they will fit right inside pan). Pinch together to make crust. Bake for 6 minutes.

    Add tomato sauce, beans and taco seasoning to beef; mix thoroughly. Top crust with meat mixture and bake an additional 10 minutes. Top with cheese and bake an additional 5 minutes.

    ***Be sure to drain the beans!!! I didn't and had to use a collander to get the excess liquid out so the crust wasn't soggy. Also I think only one can of tomato sauce is enough. Or maybe a can of diced tomatoes INSTEAD of any tomato sauce at all.

    ***Leann's notes: replace 16oz of tomato sauce with 8oz of taco sauce. Let liquids simmer off a bit before adding to crust.
