    CRUST:
    1 cup all purpose flour
    1/3 cup butter or margarine, softened
    1/4 cup powdered sugar

    TOPPING:
    1 cup sugar
    2 eggs
    2 tablespoons all purpose flour
    2 tablespoons lemon juice
    1/2 teaspoon lemon extract
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    powdered sugar

    Recipe




    Combine crust ingredients and pat into an 8 inch square baking pan. Bake at 375¼F for 15 mintues. Meanwhile, for topping, combine sugar, eggs, flour, lemon juice, extract, baking powder and salt in a mixing bowl. Mix until frothy; pour over crust. Bake at 375¼F for 18-22 minutes or until light golden brown. Dust with powdered sugar. Serves 9.
