Taste of the South Burrito Casserole

    Source of Recipe

    Taste of the South

    Recipe Introduction

the next time I make this I will probably use two cans of enchilada sauce instead of one sauce and the beef gravy. Also, I'm thinking it wouldn't hurt to put some grated cheese in between the layers too

    List of Ingredients

1 (10.25 oz.) can beef gravy
1 (10 oz.) can enchilada sauce
    1 1/2 lb. ground chuck
    1 envelope taco seasoning mix
    1 cup water
    2 (16oz.) cans refried beans
    10 to 12 flour tortillas
    1 8oz. sour cream
    1 8oz. grated cheddar
Garnish: salsa, lettuce, chopped tomato, sliced green onion

    Recipe

Preheat oven to 350. In a small bowl, combine gravy and enchilada sauce and set aside. Brown grond meat in a large skillet, drain well. Add taco seasoning and water and continue to cook until liquid has been absorbed (5-10 minutes). Add refried beans to meat mixture and stir well.

Line a greased 9x13 baking dish with 1/3 of the tortillas. Spread half of the meat and bean mixture over tortillas, and top with half the sour cream. Repeat layers, ending with the final third of tortillas. Pour gravy mixture over casserole and top with grated cheese. Bake for 30-45 minutes or until hot and bubbly. Let sit 10 minutes before serving.

To serve, cut in squares and top with your favorite toppings.
