Red Beans and Rice

List of Ingredients
1 pkg. dried red beans
2 tbsp. margarine
1 heaping tbsp. garlic salt
1 tsp. red pepper
1 tsp. black pepper
2 tbsp. Cajun seasoning
1/2 c. chopped scallions or white onions
1/2 c. bell pepper, chopped
12 oz. beer, divided
1-1/2 lbs. Hillshire Farms smoked
sausage, cut in bite-sized pieces
Hot sauce to taste
Rice

Soak dried red beans in cool water overnight (I put them in the refrigerator in the crock pot insert). Place in crock pot in the morning. Add margarine, seasonings, scallions or onions, bell pepper and 6 ounces beer. Cover and cook on low setting about 8 or 9 hours. Then add sausage, 6 ounces additional beer, hot sauce to taste and cook 45 minutes more. Serve over rice, garnished with scallions.
