    Florentine Swiss Pie

    2 cups of swiss cheese, grated
    2 Tbs flour
    1-1/4 cups of milk( used low-fat)
    3 eggs beaten( will use 2 next time)
    1/2 tsp salt( did not use)
    Dash of nutmeg and pepper
    9" unbaked pie shell
    1 Med zucchini sliced
    3-oz can of mushrooms, drained( used fresh baby bellas)
    3 large pitted olives, sliced( Did not use)
    1/4 pound pepperoni, sliced

    Oven set at 350. Mix the flour with 1-1/2 cups of the cheese. Mix well. Combine the milk and eggs and seasonings. Mix well then add to the cheese mixture. Pour into the pastry shell and bake for about 35-40 minutes. ( I baked it closer to 35 minutes)You may want to use a pie crust shield). Remove from the oven and place the mushrooms, zucchini, olives and pepperoni in concertric circles around the pie. Sprinkle with the remaining, reserved 1/2 cup of cheese. Return to the oven and bake for an additional 20 minutes.

    * Next time I will do a little layering with this pie by adding some of the zucchini and mushrooms on the bottom, then add the custard, then finish up with the remaining mushrooms , zucchini and olives on top. I did not use the olives as I felt it would make the pie too salty.

    * Some niced additions would be red pepper, yellow squash or make it Mexicana, and use tomatoes with a Mexicana blend of cheese, some taco spices and Jalapenos~~ Ole'
