    My Husband, Charles

    Recipe Introduction

When we first married, I did not know how to cook and was almost afraid to try. This was one of the first recipes I remember my husband teaching me.

    List of Ingredients

Oil (enough to coat bottom of pot)
    Minced Garlic (to taste)
1 large or 2 medium onions, chopped
    1 8oz. pkg. mushrooms, sliced
2 medium to large zucchini, quarter slices
1 12oz. pkg. Morningstar Farms Harvest Burgers Recipe Crumbles
    1 28oz. can diced tomatoes
    1 6oz. can tomato paste
    Water (if necessary)
    2 TBS Italian seasoning*
    1 tsp basil*
    1 and 1/2 tsp oregano*
1 and 1/2 tsp crushed red pepper*
    1 TBS garlic powder*

    * Spice amounts are approximate.

    Recipe

Coat bottom of pot (5 quart dutch oven) with oil. Sautee minced garlic with onions and mushrooms until onions are somewhat soft. Add zucchini and let simmer until zucchini starts getting soft. Add Recipe Crumbles, diced tomatoes, and tomato paste. Let simmer a couple of minutes. Add water if you think there is not enough liquid. Reduce heat, cover, and let simmer for at least 15 - 20 minutes. Stir occasionally.

This recipe makes a thick sauce. Serve with pasta, salad, and garlic bread.
