Fried Rice
List of Ingredients
1 cup tiny shrimp
1/4 pound fresh or frozen peas
1/3 cup carrots fresh or frozen, diced
2 tablespoon oil
2 cup long-grain rice, chilled
pinch of salt
2 eggs, beaten Recipe
Blanch the peas and carrots in boiling water for about 5 minutes (2 minutes for frozen); drain.
Heat a wok or large skillet until it is hot.
Add the oil and wait until it is almost smoking.
Add the cooked rice and stir-fry 1 minute.
Add the shrimp, peas, carrots, and salt.
Continue to stir-fry 5 minutes over high heat.
Next add the beaten eggs stir-fry for 2 minutes or until the eggs have set.
