Caribbean Pistachio Turkey Salad

1/3 Cup frozen tropical fruit or limeade concentrate
1/4 Cup white rice vinegar
1 Tablespoon vegetable oil
1-1/2 Quarts torn lettuce washed, drained and chilled
2 Cups COOKED TURKEY BREAST thinly sliced
1 papaya pared, seeded and sliced
1/2 Small fresh pineapple pared and cut into half-rounds
1/3 Cup natural California pistachios shelled
1/4 Teaspoon bottled red pepper flakes crushed
Combine fruit or limeade concentrate, white rice vinegar and oil in a jar. Shake dressing well to combine.
Place chilled lettuce on 4 plates and arrange turkey slices and fresh fruit slices atop lettuce.
Sprinkle with pistachios and pepper flakes.
Serve with well-mixed dressing.
