Aztec Chicken and Dressing

List of Ingredients
3 c. cornbread stuffing mix
2 c. cooked chicken, diced
1 can chopped green chilies, drained
1/2 jar roasted red bell pepper, drained and chopped
2 tsp. ground coriander
1 can cream of mushroom soup, undiluted
1 (8 3/4 oz.) can cream style corn
1 c. sour cream
2 tsp. ground cumin
1 c. Monterey Jack cheese, shredded
Recipe
Mix together stuffing mix, chicken, chilies, roasted bell pepper and coriander in large bowl. Stir in soup, corn, sour cream and cumin. Pour into lightly greased 9x13 baking dish. Bake uncovered at 350 deg. for 25 minutes. Sprinkle with cheese; bake 5 minutes more. Serve with tortilla chips and salsa, if desired.
