    Recipe Introduction


    This is my own final version of Black Forest Cake after experimenting with several different recipes.


    List of Ingredients


    • 2 20oz cans tart pitted cherries, undrained
    • 1 Cup granulated white sugar
    • 1/4 Cup cornstarch, (1/2 tsp baking powder if u don't have cornstarch)
    • 1 1/2 Teaspoons vanilla extract
    • 2 boxes chocolate cake mix
    • 3 cups cold whipping cream
    • 1/3 Cup confectioners' sugar
    • 2 Large eggs
    • 1/4 cup EVOO


    Instructions


    1. Bake 2 9inch round chocolate cakes according to box instructions. Let cool.
    2. Drain cherries, reserving 1/2 cup cherry juice from can.
    3. Combine reserved cherry juice, cherries, white sugar and cornstarch in saucepan. Cook and stir over low heat until thickened. Add vanilla slowly and stir well.
    4. Split each cake layer in half horizontally. Crumble one half layer and set aside.
    5. Beat cold whipping cream and confectioners' sugar in large mixing bowl with an electric mixer set at high speed until stiff peaks form. Reserve 1 1/2 cups whipped cream for decorative piping.
    6. Place one cake layer on serving plate. Spread with 1 cup whipped cream; top with 3/4 cpu cherry topping.
    7. Top with second cake layer, 1 cup whipped crem and 3/4 cup cherry topping; top with third cake layer.
    8. Frost cake sides with remaining whipped cream; pat gently with reserved cake crumbs.
    9. Spoon reserved 1 1/2cups whipped cream into pastry bag fitted iwwth star tip; pipe around top and bottom edges of cake. Spoon remaining cherry topping over top of cake.


    Final Comments


    If you don't have a star tip for your piping, ou can place the whipped ream in a zip lock bag, twist cream to one corner end, then cut off the end to create an opening.....Also...a tip to get perfect stiff peaks quickly is to chill the mixing bobwl and beaters before beating the cream. Also make sure that the whipping cream is well chilled.
