    Recipe Introduction


    Great for serving at family get-togethers or just as a weekend dessert enjoyed by the whole family.


    List of Ingredients


    • 1 Cup sifted cake flour
    • 2 Cups granulated white sugar, divided
    • 1/2 Cup unsweetened cocoa powder
    • 1 1/2 Cups large egg whites, room temp
    • 1 Teaspoon cold water
    • 1/4 Teaspoon salt
    • 1 Teaspoon cream of tartar
    • 1 Teaspoon vanilla extract
    • 1/4 Cup whipping cream
    • 1/2 Cup semisweet chocolate chips


    Instructions


    1. Preheat oven to 400'. Sift the cake flour, 1 cup white sugar and cocoa into a mixing bowl and mix well; sift again.
    2. Combine egg whites, water and salt in a large bowl. Beat with an electric mixer set at high speed until frothy.
    3. Beat in cream of tartar until stiff peaks form. Beat in remaining sugar and the vanilla extract. Fold in flour mixture.
    4. Pour into a tube pan. Run a knife through batter to break up any air pockets. Reduce oven temp to 375'/ Bake for 10 minutes.
    5. Reduce the oven temp to 300'. Bake until cake springs back when touched, about 35 minutes.
    6. Invert tube pan on a bottle. Cool cake for 40 minutes. Loosen cake from sides of pan with a sharp knife. Place cake on a cake plate.
    7. For glaze, bring cream to a boil in a small saucepan. Add chocolate chips and stir until melted. Drizzle over cake.


    Final Comments


    If you don't have a tube pan, then you can use any empty vegetable can and place it in the middle of a large round baking deep baking dish. Make sure that you remove the label before inserting into pan.
