Great for serving at family get-togethers or just as a weekend dessert enjoyed by the whole family.
List of Ingredients
- 1 Cup sifted cake flour
- 2 Cups granulated white sugar, divided
- 1/2 Cup unsweetened cocoa powder
- 1 1/2 Cups large egg whites, room temp
- 1 Teaspoon cold water
- 1/4 Teaspoon salt
- 1 Teaspoon cream of tartar
- 1 Teaspoon vanilla extract
- 1/4 Cup whipping cream
- 1/2 Cup semisweet chocolate chips
Instructions
- Preheat oven to 400'. Sift the cake flour, 1 cup white sugar and cocoa into a mixing bowl and mix well; sift again.
- Combine egg whites, water and salt in a large bowl. Beat with an electric mixer set at high speed until frothy.
- Beat in cream of tartar until stiff peaks form. Beat in remaining sugar and the vanilla extract. Fold in flour mixture.
- Pour into a tube pan. Run a knife through batter to break up any air pockets. Reduce oven temp to 375'/ Bake for 10 minutes.
- Reduce the oven temp to 300'. Bake until cake springs back when touched, about 35 minutes.
- Invert tube pan on a bottle. Cool cake for 40 minutes. Loosen cake from sides of pan with a sharp knife. Place cake on a cake plate.
- For glaze, bring cream to a boil in a small saucepan. Add chocolate chips and stir until melted. Drizzle over cake.
Final Comments
If you don't have a tube pan, then you can use any empty vegetable can and place it in the middle of a large round baking deep baking dish. Make sure that you remove the label before inserting into pan.
