Recipe Introduction
This was a famous recipe passed down by my grandmother. At every time the family got together she had several made because they went quickly.
List of Ingredients
- 1 Cup + 2 Tablespoons granulated sugar divided
- 2 1/2 Tablespoons all-purpose flour
- 1/8 Teaspoon nutmeg
- 1/8 Teaspoon salt
- 4 Egg yolks
- 4 Egg whites, divided
- 1 Cup milk
- 2 Tablespoons butter, melted
- 1 9inch unbaked pie shell
Instructions
- Preheat oven to 400'
- Combine 1 cup white sugar, flour, nutmeg and salt in large mixing bowl and mix well.
- Place 4 rgg yolks and 2 egg whites in medium mixing bowl. Beat with electric mixer at medium speed until blended.
- Stir egg yolk mixture into sugar mixture. Gradually add milk, sitrring constantly. Add butter and mix well.
- Spoon egg mixture into pie shell.
- Bake for 10 minutes. Reduce oven temp to 325'. Bake pie until set, about 25 minutes.
- Place remaining egg white in a small bowl. Beat with electric mixer at high speed until frothy.
- Add remaining sugar to egg whites. Beat until stiff peaks form.
- Spread meringue over the baked layer, sealing to edge of crust.
- Bake until meringue is lightly browned, about 10 to 15 minutes.
Final Comments
To get the fancy restaurant tasting pie add a tablespoon of marsala wine and a teaspoon of vanilla exract to the egg mixture.
