Recipe Introduction
This is an old German family recipe... yes, really from MY family. I am not sure it is spelled right but pronounced 'FILT-ZEL". I have been totally unable to find any references to this on the internet, but I remember my Grandma and Grandpa Scheffer making this every holiday. The recipe is the best of memory from my Aunt Connie's recipe cards. - Ginny
List of Ingredients
Filtsil (Scheffer Family Recipe)
5 pounds potatoes
3/4 pound bacon
2 onions chopped
2 eggs
fresh parsley chopped
bread crumbs
nutmeg
salt
pepper Recipe
Boil potatoes in jackets until not too soft.
Cool.
Peel and chop potatoes. (Important, chop, not mash).
Render bacon not too crisp.
Chill and chop and add to potatoes.
Saute onion and chopped parsley in bacon fat until golden.
Add to potatoes along with 2 beaten eggs.
Mix.
Add some bread crumbs.
Season with salt and pepper and a little nutmeg.
